A healthy mini cake that has the texture of the real thing!

² Ingredients

  •  1 serving (serving = 1/2 cup dry) Quaker Old Fashioned Oats
  •  0.125 tsp Cinnamon
  •  1/2 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  0.125 serving (serving = 1/2 cup) Publix Unsweetened Applesauce
  •  2 serving (serving = 1/4 tsp) Tone's 100% Pure Vanilla Extract
  •  1/4 serving (serving = 1/4 cup) Mrs. Butterworth's Sugar Free Syrup
  •  1/4 serving (serving = 8 oz) Chobani 0% Plain Greek Yogurt
  •  2.666 serving (serving = 3 tbsp) All Whites 100% Liquid Egg Whites
  •  1/4 serving (serving = 1 serving) Chobani 0% Plain Greek Yogurt (6 oz)
  •  1 serving (serving = 1 packet) Sugar in the Raw Stevia in The Raw (Packet)
   

q Directions

first, grind 1/2 cup raw old fashioned rolled oats into a flour. Then add 1/2 cup liquid egg whites (or 3 egg whites), 1 TBSP unsweetened applesauce, 3 TBSP plain Greek yogurt, 1 TBSP coconut flour, 1/2 tsp vanilla extract, 1/2 tsp baking powder, 1/2 tsp apple pie spice, and 1 stevia packet. Blend again. Swirl 1/4 cup chopped apple into the batter. Pour into a bowl sprayed with nonstick spray. Microwave for 2:45-3:15 minutes. Flip onto a plate and let cool.

Make the maple spice icing by mixing 1/4 cup plain Greek yogurt, 1 tbsp sugar free breakfast syrup, 1/8 tsp apple pie spice, and 1 stevia packet. Add on top of your mugcake. Add more apple on top.
