This filling meal is not just perfect for breakfast. Make the hash as a side dish for lunch or dinner!

² Ingredients

   

q Directions

Pre-Heat oven at 350 degrees

Cut up 1 medium Sweet Potato, when chopped it = about 1 1/2 cups. You can peel it, or leave the skin on (I chose to peel)

Lightly spray baking dish with olive oil and toss in Sweet Potato

Bake for 10-12 minutes.

Remove from Oven and Add:

1 chopped Yellow Plantain (the blacker the outside, the sweeter)

1/2 Small Red Onion, Diced

1/4 Red Bell Pepper, Diced

Season lightly with Mrs. Dash Table Blend and Mix

Bake for another 20-25 minutes, depending on how big you cut your sweet potato

Place under the Broiler to achieve some slight crispiness

Top with an Egg or Two and ENJOY!
