A clean juicy blackened chicken, over a fluffy bed of quinoa.
Place quinoa in pot after the chicken broth has come to a boil, put element on low and let simmer for about 15-20 minutes. Add scallions once cooked through and no water remains in the pot.
Mix all spices together and rub all over chicken breasts. Spray olive oil on a frying pan and cook chicken on medium-medhigh heat for 7 minutes on each side (or until cooked through). Cover the frying pan while cooking the chicken, this will help with the blackened taste.
Mix greek yogurt, lemon juice, garlic powder and avocado in a processor.
Put chicken on bed of quinoa with the drizzle of sauce on top.
