These nutty flavoured pancakes are packed with nutrients and are so easy to make.

² Ingredients

  •  1 serving (serving = 1/4 cup) Bob's Red Mill Organic Quinoa Flour
  •  1 serving (serving = 1 tsp) Bob's Red Mill Double Acting Baking Powder
  •  1/2 serving (serving = 1/2 cup) Private Selection Frozen Wild Blueberries
  •  1 serving (serving = 1/2 cup) Nordica Fat Free Cottage Cheese
  •  1 serving (serving = 1/4 cup) Compliments Egg Whites
  •  1 serving (serving = 1/4 tsp) Tone's 100% Pure Vanilla Extract
   

q Directions

Mix all ingredients together very well. Heat a frying pan and grease very lightly with olive oil. Measure out each pancake using a 1/4 cup and cook about a minute on each side. Makes 6 pancakes.

Top with your favourite topping.

I topped mine with microvawed frozen blueberries and a touch of coconut butter.
