³ Description

A healthy and fulling meal consisting of cooked brown rice and lentils

² Ingredients

  •  100 g Brown Rice
  •  1/2 medium (2-1/2" dia) Onions
  •  100 g Lentils
  •  1.5 tablespoon Extra Virgin Olive Oil
   

q Directions

1) Finely chop half of a brown onion
2) Heat 1 table spoon and a half of olive oil in a pot and add your onions and cook until brown
3) While the onions are cooking measure 1/4 of a cup of brown rice and 1/4 of a cup of brown lentils
4) Add lentils and rice to onion and cook for about 2 minutes
5) Add boiling water to brown rice , lentils and onions enough to cover it
6) Cook until rice and lentils are thoroughly cooked

Enjoy with a side of salad or some plain Greek yogurt
