1/2 cup oats
1.5 cup almond milk
1/4 cup chopped carrots, cooked
1/4 cup egg whites
1/4 tsp coconut extract
1T shredded coconut
1T walnuts
1 packet stevia

Directions: Place oats, carrots, and milk in bowl and cook in microwave for 1 minute. Add egg whites and cook for another 30 sec-1 minute. Remove and pour into blender and blend until smooth. Stir in all other ingredients. Top with nuts or extra coconut if desired.
Optional: can use honey instead of stevia
