A delicious dairy-free and gluten-free alternative to my favorite creamy soup!

² Ingredients

  •  1 cup, pieces or slices Mushrooms
  •  1.5 serving (serving = 1 cup) Emeril's All Natural Organic Vegetable Stock
  •  2 serving (serving = 1/3 cup) Trader Joe's Coconut Cream
  •  9 tsp Minced Garlic
  •  3 tbsp chopped Shallots
  •  1 tsp Salt
  •  1 dash Black Pepper
   

q Directions

Saute the mushrooms, shallots and garlic and season with salt and pepper. Add coconut cream and vegetable stock, season once more and stir together. Let simmer for 45 minutes, or until it resembles a creamier texture. Garnish with green onion and enjoy!
