Make yourself a quick gourmet breakfast. Its almost TOO easy. So light and creamy. You can thank me later...

² Ingredients

  •  1/4 cup, shelled, raw (yield after cooking) Baked or Broiled Shrimp
  •  1 medium Egg
  •  1/2 oz Feta Cheese
  •  1 large Egg White
  •  1/4 tsp Garlic Powder
  •  1 dash Black Pepper
  •  1/2 tablespoon Olive Oil
  •  1/4 avocado, NS as to Florida or California Avocados
  •  1 spear, small (5" long or less) Asparagus
  •  1/4 serving (serving = 2 cups) Earthbound Farm Organic Spring Mix
   

q Directions

1. In a bowl, scramble 1 whole egg + 2 egg whites.

2. Heat a pan with 1/2 tbsp olive oil and pour your egg mixture in.

3. When you egg is looking semi-cooked, spread a small handful of organic spring mix, 1/4 small cooked shrimp and 1 tbsp feta cheese on one side. Fold over.

4. Once the omelette is cooked, place it on a plate and top with 1/4 avocado.

5. You can sprinkle it with garlic powder & cracked black pepper if you'd like and side it with a few asparagus spears
