³ Description

Do you remember my cauliflower crust pizza? (more like pizza attempt) Well it was pretty good but it doesn't even BEGIN to compare to THIS. Who would have thought that the base is. GARBANZO BEANS! What? Garbanzo Bean Crust Pizza! Yes! CHICKPEAS! This crust is so good and satisfying- you can seriously pick it up and eat it like real pizza! Vegetarian and still packing that protein!

² Ingredients

  •  1/4 tsp Salt
  •  1 serving (serving = 1/4 cup) Bob's Red Mill Garbanzo Bean Flour
  •  1/4 tsp Thyme
  •  1/4 cup Spinach
  •  1/2 cup (8 fl oz) Water
  •  1 slice (1 oz) Mozzarella Cheese
  •  1 serving (serving = 1 tbsp) Classico Bruschetta Basil & Tomato
  •  1/4 tsp Rosemary
  •  1 tbsp Parmesan Cheese (Shredded)
  •  1/4 cup, pieces or slices Mushrooms
  •  1/2 serving (serving = 1 medium) Roma Tomatoes

q Directions

INGREDIENTS for crust

2/3 cup garbanzo flour
1/4 tsp salt
1/2 cup water
1/4 tsp rosemary
1/4 tsp thyme (any other seasonings/herbs to taste)

INGREDIENTS for pizza topping

2-3 Tbsp red sauce (I use classico tomato & basil because it's lower in sugar!) (more or less to your sauce liking! I wanted a thin layer!)
1oz mozzarella cheese, shredded
1/2 roma tomato, cut into slices
1/4 cup chopped spinach
1/4 cup mushrooms, sautéed
1 Tbsp parmesan cheese, shredded

PROCEDURE Combine crust ingredients in a bowl using a whisk. Allow to sit at room temperature for 30-45 minutes. Heat a large skillet over medium heat. Spray liberally with cooking spray and pour crust batter onto pan, using the back of a spoon (if necessary) to spread and cover entire pan. Cook for 2-3 minutes on each side, until lightly browned (yes, you have to flip that bad boy like a pancake! It should hold up fairly well, though!) Remove from heat and preheat broiler. Dress crust with sauce and desired toppings while STILL IN SKILLET! Place skillet in broiler for 3-5 minutes, until cheese is melted and toppings are tender. Cut into slices and enjoy!

I figured that the flour should be 2/3 cups as in the description and not 1/4 cup as in the ingredient list. The recipe is quite nice!

I am a bit confused: How much flour goes into the crust? Is it 1/4 cup or 2/3 cups?

I love this! I have made it 4 times now and it just keeps getting better. It is very hot here right now so instead of turning on the oven after I flip it and put all the yummy toppings on, I tent it with foil until the cheese is melted.
