These green waffles are perfect for breakfast, brunch, lunch or brenner!! Yummm

² Ingredients

  •  2 serving (serving = 1 slice) Publix Colby Jack Cheese
  •  1/4 tsp Baking Soda
  •  3 serving (serving = 1 tsp) XyloSweet Xylitol
  •  1/2 serving (serving = 4 cups) Marketside Fresh Spinach
  •  4 serving (serving = 1 egg) Food Club Large Egg
  •  1 serving (serving = 2 strips) Morningstar Farms Veggie Breakfast Bacon Strips
  •  2 serving (serving = 2 tbsp) Nutiva Coconut Flour
  •  6 serving (serving = 1 tsp) French's Classic Yellow Mustard
   

q Directions

In a VitaMix, blend 1/2 bag fresh spinach and 4 large eggs (whole) until smooth. In a large bowl, mix 1/4C coconut flour, 1T xylosweet (or sweetener of choice), and 1/4t baking soda. Slowly pour and mix wet into dry. Separate the batter in half. Spray a waffle maker with coconut oil and cook. I served mine with a slice of “bacon”, a 1 egg omelet and some yellow mustard. I put some cheese on my moms and she really liked it. The coconut flour is really dense so you will want something creamy; maybe guac?
