² Ingredients

  •  1/2 cup, chopped Young Green Onions
  •  1 oz Lemon Juice
  •  1/2 cup slices Cucumber (with Peel)
  •  1/2 cup Parsley
  •  1 tablespoon Extra Virgin Olive Oil
  •  1 cup, chopped Bell Peppers
  •  2 serving (serving = 1/4 cup) Whole Foods Market French Green Lentils
  •  1/2 tbsp Balsamic Vinegar
   

q Directions

enjoying my refreshing lentil salad for lunch with grilled cod fillet. Salad recipe: 1 cup cooked green lentil ( dont overcook), mixed colored bell peppers, cucumbers, green onions, parsley. Dressing: lemon juice, olive oil, cayenne pepper, cumin( a must dor a athentic taste), balsamic vinegar, salt. Combine salad igredients all chopped small and add the dressing. Toss together and chill for 20 min or so. So healthy and nutritious.
