³ Description

Perfectly grilled Chicken Breast served over a bed of Gluten-free Brown-rice Penne covered in a fresh Tomato-Basil Sauce. Served with a side of grilled Zucchini slices.

² Ingredients

  •  1 tbsp Chili Powder
  •  1 tbsp Garlic Powder
  •  2 tsp, ground Oregano
  •  1 tbsp Black Pepper
  •  5 leaves Basil
  •  2 tsp Salt
  •  4 slice Zucchini
  •  8 oz Crushed Tomatoes (Canned)
  •  1/2 serving (serving = 1 oz) Frank's Red Hot Sauce
  •  1 serving (serving = 4 oz) Tyson Foods Boneless Skinless Chicken Breasts
  •  1/2 serving (serving = 1 medium onion) Tanimura & Antle Sweet Yellow Onion
  •  2 tablespoon Extra Virgin Olive Oil
  •  1 serving (serving = 1 tsp) Spice Classics Italian Seasoning
  •  3 tsp Minced Garlic
  •  1 serving (serving = 1 cup cooked) Hodgson Mill Brown Rice Penne Pasta
  •  1/4 serving (serving = 1/4 cup) Stella Parmesan & Romano Cheese
   

q Directions

For Sauce: Saute minced garlic in olive oil in medium saucepan. Add in onion and let cook for about 2 minutes. Add in crushed tomatoes along with salt, pepper, chili powder, hot sauce, oregano, and italian seasonings. Stir and let all ingredients mix. Simmer on low.

While sauce is simmering, start boiling water for pasta and add in a dash of salt and olive oil to keep pasta from sticking. While waiting for the water to boil, prep chicken and zucchini by trimming and cleaning the chicken breast and covering it lightly in olive oil and then sprinkling with pepper and chili powder. Also lightly drizzle olive oil on zucchini with garlic powder and pepper.

Check water, if boiling put in 1/2 cup uncooked brown-rice pasta and stir. While that is cooking go turn on grill and let heat up to 400F. While it heats stir pasta and sauce.

Once grill is heated put chicken breast and zucchini on grill, close lid and let cook for about 5 minutes. While that cooks check pasta to see if it is ready, if ready drain and lightly cover in sauce to prevent sticking and drying out. Go back to grill and check to see if chicken is halfway cooked (bottom and sides will be cooked while top remains raw). If this is the case flip chicken, if not wait until this appears. Check zucchini also, if there are light grill marks, flip, if not wait until there are and then flip.

Once flipped, cover and let cook for another 5 or so minutes (until chicken is cooked through, should be fairly firm to the touch, but still maintain a slight give.)

ALSO DON'T FORGET TO TURN OFF THE GRILL AND STOVETOP ONCE DONE!

To Assemble: Plate pasta and then cover in sauce. Place chicken breast on top and zucchini slices beside. Cover chicken and pasta with minced fresh Basil leaves as well as 1tbsp of cheese.
