³ Description

It's summer time and that means going to the beach... Or enjoying this Greek dish! Such an easy meal and ever so full of flavor.

² Ingredients

  •  5 serving (serving = 4 oz) Organic Prairie Organic Boneless Skinless Chicken Breast
  •  1 cup Spinach
  •  5 serving (serving = 1/2 oz) Bella Sun Luci Sun Dried Tomatoes Julienne-Cut
  •  3/4 cup, pieces or slices Mushrooms
  •  1 serving (serving = 1/4 cup) Culinary Circle Crumbled Feta Cheese Reduced Fat
  •  5 fruit (2" dia) Limes
   

q Directions

Chop all veggies beforehand.
Squeeze juice out of the limes. Pour the juice into a lagre ziplock bag.
Cut the chicken breast 3/4 deep down center or horizontally. Make sure you don't cut all the way through.
Place chicken into bag to marinade for 30 minutes.
Pre Heat oven to 350 degrees.
Place chicken in a greased pan after it is done marinading.
Pour lime juice into pan for it to cook in.
Stuff the chicken evenly with the ingredients: Spinach, Mushroom, Sun Dried Tomatoes, and Feta
Cook uncovered 35-45 minutes.
Baste chicken with lime juice half way through and when it is done.
