2 T peanut flour*
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp vanilla
2-3 drops liquid stevia
2 T egg whites (or flax egg)
1/2 small butternut squash, pre-roasted
Mix dry ingredients in a small bowl. Add wet ingredients and stir to combine.
Pour mixture in the â€œbowlâ€ of the squash. Microwave ~45 seconds.
Top as desired (I used sugar-free syrup and pomegranate arils). Enjoy!
