  •  1 cup, chunks Pineapple Chunks (Sweetened, Frozen)
  •  2 serving (serving = 1 medium pepper) Publix Red Bell Pepper
  •  1 cup, cooked Quinoa (Cooked)
  •  1 breast, bone and skin removed Skinless Chicken Breast

Pineapple, Chicken, & Quinoa Stuffed Peppers... 4 ingredients, but does not lack in flavor at all! Seri so bomb and easy!

Ingredients (2 servings): 2 medium chicken breast, 2 red bell peppers, 1 small can diced pineapple (1/2 cup), 1 cup cooked quinoa.

Directions: Season and bake chicken on 375 for 15-20 minutes, gut and roast peppers on 375 for 25-30 minutes. Cook quinoa and dice pineapple and chicken, then mix the three ingredients together and stuff pepper! Boom!
