³ Description

We love cooking with pumpkin, its so versatile & super healthy. This bread makes for the perfect snack with a spread of peanut butter; top it with poached eggs for breakfast or add it to your salad for a little change up at lunch time! This particular version is made in a thermomix BUT its easily adapted to use whatever appliances you have available.

² Ingredients


q Directions

1. Chop pumpkin & add to mixing bowl of thermomix. Chop for 4 seconds, speed 5
2. Add zucchini to mixing bowl, chop 2 seconds, speed 5
3. Add almond meal, protein powder, eggs, coconut oil, baking soda, cinnamon, nutmeg & salt. Combine with reverse blade for 15 seconds speed 5.
4. Pour mixture into a loaf tin & top with almonds
5. Bake for 45-50 minutes in the oven at 180 degrees. Check with a skewer
