³ Description

It's the time of the year again! Even though I think pumpkin should be enjoyed year round, here's a pumpkin pie recipe for all you basics that only eat pumpkin in the fall. Not to mention, protein bars are way cooler than lattes anyway.

Ingredients:
1 cup cashews (or nut of choice)
1 cup oats
2 scoops vanilla protein powder
1/3 cup canned pumpkin
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
Optional: white chocolate chips

Directions: place cashews and oats in food processor or blender and until smooth. In a medium bowl, mix together all ingredients then form into a ball. Line an 8x8 baking pan with wax paper and spray with cooking spray. Spread dough flat into pan and top with white chocolate chips if desired. Place in freezer for about 30 minutes or until firm. Cut into 12 bars.
