Refreshing, Delicious Lemon Cheesecake. Low Carb, Keto, Paleo, Raw, Vegan, Vegetarian, Sugar Free, Dairy Free

² Ingredients

  •  1/2 cup Lemon Juice
  •  1 tsp Lemon Peel
  •  9 oz Macadamia Nuts
  •  10.66 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  •  1.5 serving (serving = 1/3 cup) Trader Joe's Coconut Cream
   

q Directions

Recipe:
-9oz cashews or macadamia nuts, soaked overnight*
-1/2c coconut cream (from top of coconut milk can)
-2/3c coconut oil or ghee, melted (I did both)
-1/2c lemon juice
-1tsp lemon extract
-60g erythritol (or another sweetener)

1) Put all ingredients in a blender and blend until smooth
2) Pour into a 8-9in diameter pan
3) Refrigerate for 3 hours until hardened

*Use macadamia for lower carb. Nutrition facts calculated with macadamia nuts
