³ Description

I've been missing cornbread like crazy, and since I only utilize recipes that can be scaled down to one serving, I went on a mission to create a quick and easy way to get my cornbread fix without the refined flour - and I succeeded. I topped mine with some Melt Organic Buttery Spread (if you haven't tried it yet, and you're a butter lover, I highly recommend it!) Also, I used Bob's Red Mill Organic Cornmeal (I think it's medium grind) but it's not in the database, so I had to put regular cornmeal in the ingredient list.

² Ingredients

  •  0.125 cup Yellow Whole Grain Corn Meal
  •  1/2 serving (serving = 1/4 cup) Bob's Red Mill Garbanzo Bean Flour
  •  1 serving (serving = 3 tbsp) Green Way Natural Liquid Egg Whites
  •  1/2 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  1/4 serving (serving = 1 cup) Trader Joe's Unsweetened Vanilla Almond Milk
   

q Directions

I have a hard time translating the decimals so here's the breakdown of the ingredients:
2 tbsp organic cornmeal
2 tbsp garbanzo bean flour
3 tbsp liquid egg whites
1/2 tsp baking powder
1/4 cup unsweetened almond milk (I used vanilla - you can use regular if you wish; there was no vanilla taste anyway)
Stevia (optional, omit if you prefer a savory cornbread)

1. Stir together all ingredients until well blended (the mixture won't be thick - don't worry, I panicked too, but it worked out)
2. Pour into a large greased mug (I used cooking spray) and microwave for 2 minutes, checking periodically.
3. Consume, followed by a happy dance.
