Sunnyside up Eggs over a Sweet Potato Hash. A nice start to a beautiful day!

² Ingredients

  •  1 cup, cubes Sweet Potato
  •  1/4 cup Corn
  •  1/4 cup, chopped Zucchini
  •  1/4 cup, sliced Yellow Summer Squash
  •  1/4 cup, NFS Tomatoes
  •  1 tsp Minced Garlic
  •  1 tsp Thyme
  •  1 tbsp Parsley
  •  1 tbsp Basil
  •  1 tbsp Canola Vegetable Oil
  •  1 large Egg
  •  1 serving (serving = 1/4 tsp) Kroger Coarse Kosher Salt
  •  1 dash Black Pepper

q Directions

Sweet Potato Hash:

In a hot saute pan add oil. Add potato and a pinch of salt When potatoes start to soften add corn, zucchini and squash. Next add garlic cook garlic but don't burn. Add tomato and herbs. Finish with salt and pepper to taste.

Top with 2 sunnyside up eggs
