Yessss! This dish will make your vision, smells and taste buds dance! Sweet Potato and Black Bean Stuffed Red Pepper

² Ingredients

  •  1 oz Goat Cheese
  •  1/2 cup Spinach
  •  1 sweetpotato, 5" long Sweet Potato
  •  1 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  •  1/2 cup Black Beans

q Directions

Preheat oven to 350 degrees. Slice red pepper in half and de-seed. Place halves on baking sheet with open part facing up. In a bowl, mash sweet potato and stir in remaining ingredients. Place half of sweet potato mixture in one red pepper and other half in the second. Bake for 10-15 minutes.
