A spin on the classic comfort sandwich!

² Ingredients

  •  2 nut Walnuts
  •  0.12 cup Ricotta Cheese (Part Skim Milk)
  •  1/4 cup, chopped Kale
  •  0.2 small Sweet Potato (Without Salt, Baked In Skin, Cooked)
  •  1/4 serving (serving = 1/4 cup) Sun-Maid California Golden Raisins
  •  0.12 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
   

q Directions

Bake 2 Slices of Sweet Potato until soft
In a Bowl, mix:
1TB Skim Ricotta Cheese
1 Leaf of Chopped Kale
1TB Chopped Golden Raisins
2 Crushed Walnuts

Fill Slices with Ricotta mix
Pan-Grill in a drop of Coconut Oil for 2-3 minutes of both sides
