It was storming today in NC...remnants of the Oklahoma horror no doubt. There is an old Russian story that my mom used to tell me about a girl who was afraid of thunder, and how her grandmother helped her overcome her fear by having her go outside and gather ingredients to make a delicious cake. They called the recipe "Thunder Cake," and it is said that by the time you make the cake and eat it, the storm will have subsided and you'll have forgotten your fears. My mom and I used to make the recipe every time it stormed, and today I made up a clean version

Mix all ingredients except for greek yogurt, protein, eggs and stevia

Seperate the yolks from the whites then beat the egg whites until they reach stiff peaks, then fold them into the previously made batter gently. Cook in an oiled 9x17 cake pan at 350 for 25-30 mins.

The frosting is just a bit of Greek yogurt, a few tbsp vanilla casein, and stevia. So good, you won't even need a thunder buddy
