These lettuce boats are perfect for a light lunch.

² Ingredients

  •  1 can (6.5 oz), drained Tuna in Water (Canned)
  •  2 Juice of 1 lemon (2-1/8" dia) Fresh Lemon Juice
  •  1 tsp Celery Seed
  •  1 carrot (7-1/2") Carrots
  •  1/3 cup, pared, chopped Cucumber (Peeled)
  •  1/4 medium (2-1/2" dia) Onions
  •  1/2 pepper, large (3-3/4" long, 3" dia) Yellow Sweet Peppers
  •  1/2 serving (serving = 1/4 cup) Good Sense Raw Sunflower Seeds
  •  1 serving (serving = 2 tbsp) Fit & Active Light Honey Dijon Mustard Dressing
   

q Directions

Salad:
1 carrot grated
1/3 cup finely chopped cucumber
1/3 cup finely chopped yellow peppers
1/4 onion, finely chopped
1 can tuna
2 tbsp. unsalted sunflower seeds

Dressing:
2 lemons, squeezed
2 tbsp. honey Dijon mustard
1 tsp. celery seed

Mix together all salad ingredients in a medium sized bowl. Whisk all dressing ingredients and pour onto salad. Spoon a little bit of each mixture onto some romaine lettuce. Serve and enjoy!!!
