² Ingredients

  •  1/2 tsp Paprika
  •  1 dash Salt
  •  2 medium Zucchini
  •  1 tsp, ground Thyme (Dried)
  •  1 medium Egg
  •  1/2 cup Dried Cranberries
  •  1 tsp Onion Powder
  •  3 serving (serving = 1 medium pepper) Publix Red Bell Pepper
  •  1 small (2-1/2" dia) (approx 4 per lb) Pink Lady Apples
  •  4.5 serving (serving = 4 oz) Jennie-O Extra Lean Ground Turkey Breast
  •  4 serving (serving = 2 tbsp) Bob's Red Mill Flaxseed Meal
  •  1/2 tsp Minced Garlic
  •  12 oz Crushed Tomatoes (Canned)
  •  1 dash Black Pepper
   

q Directions

Ingredients:

Turkey, Apple & Cranberry Meatball Ingredients
500gms Turkey Mince
1/2 cup raw wheat germ (could sub with breadcrumbs, flaxseedmeal or coconut flour)
1 pink lady apple grated
1/2 cup dried cranberries chopped
1 tsp onion powder
1 tsp thyme
1 egg
salt & peper to taste

Char Grilled Bell Pepper Sauce
3 large red Bell Peppers
1 can chopped tinned tomatoes or 3 punnets of cherry tomatoes
1/2 tsp crushed garlic
1/2 tsp paprika
salt & peper to taste

Zuchinni Pasta
2 raw zuchinni grated with julienne slicer

Chargrill Bell Peppers under the grill or in the oven then blend together with tinned or cherry tomatoes, garlic, paprika and salt & peper. Put to side.
Mix all meatball ingredients until well combined in a bowl then roll into balls using 1/8 cup of mixture (should make 28). Melt coconut oil in frypan and cook meatballs over medium heat until browned.
Place browned meatballs in baking dish and cover with char grilled Bell Pepper sauce. Bake in 180 degree (C) oven for 20 minutes.

Serve over raw zuchinni pasta.

Makes 4 large serves (7 meatballs each)

Note: Sub Bell Peppers for Capsicums for original recipe!
