³ Description

Such an easy and healthy meal - and perfect to satisfy the Mexican food craving! Leftover mixture is great on greens as a Mexican salad!

² Ingredients

  •  5 small chappatti or roti (6") Whole Wheat Tortilla
  •  1/4 cup Cilantro
  •  1 tsp Cumin
  •  1 tsp, leaves Oregano
  •  1 small Onions
  •  1/2 medium (approx 2-3/4" long, 2-1/2" dia) Green Peppers
  •  1 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  •  1/2 pepper, large (3-3/4" long, 3" dia) Yellow Sweet Peppers
  •  1 tablespoon Extra Virgin Olive Oil
  •  1 tsp Minced Garlic
  •  1 serving (serving = 2 tbsp) Kirkland Signature Organic Salsa - Medium
  •  3 serving (serving = 1/2 cup) Lilydale Extra Lean Ground Turkey
  •  1/4 serving (serving = 1 cup) Kirkland Signature Nonfat Plain Greek Yogurt
  •  1 serving (serving = 1 tsp) McCormick Crushed Red Pepper Flakes
   

q Directions

1. Brown turkey, drain, and set aside.
2. In oil, saute sliced onions and minced garlic. Add in sliced peppers and saute more.
3. Add in turkey, spices, salt and pepper to taste, (and sriracha: optional), and mix.
4. Microwave tortilla for 20 seconds. Place approx. 1 cup of mixture onto tortilla making sure to leave room to close. Top with 1 tbsp Greek yogurt, 1 tbsp salsa, and some cilantro.
