A delicious spanish inspired warm soup.

² Ingredients

  •  2 serving (serving = 1 slice) Food For Life Baking Company Ezekiel 4:9 Sprouted 100% Whole Grain Bread
  •  1 large (8-1/4" long) Cucumber (Peeled)
  •  4 clove Garlic
  •  2 pepper Jalapeno Peppers
  •  2 serving (serving = 1/4 tsp) Morton Sea Salt
  •  3 serving (serving = 1 tbsp) Pompeian Red Wine Garlic Flavor Vinegar
  •  1 tablespoon Extra Virgin Olive Oil
  •  1 cup, chopped Red Onions
  •  1 serving (serving = 1/4 tsp) Tone's Ground Black Pepper
  •  1 cup Cherry Tomatoes
  •  3 serving (serving = 1 cup) Trader Joe's Mini Heirloom Tomatoes
  •  1 small Bell Peppers
   

q Directions

In a large pot on medium high heat, saute garlic and red onion in olive oil until fragrant.
Next, add in heirloom tomatoes, cherry tomatoes, cucumber, green bell pepper, and jalapenos. Continue to cook for 5 minutes until tomatoes break down.
Pour the ingredients into a blender and puree until chunky. Add in chopped bread and pulse the blender a few times. Pour the mixture back into the pot and add in vinegar, salt, and pepper.
Serve slightly warm or chill in refrigerator for at least an hour to cool.
