A perfectly flavored and light brunch paleo scone.
In a large bowl, mix together 2 cups of Almond Meal (or Flour), 1 Tablespoon of anise seed, Â¼ teaspoon salt, and 1 teaspoon baking powder.
Next, add in one egg and 2 teaspoons of vanilla extract until well incorporated, then add in 4 Tablespoons of honey.
Once all the ingredients are well incorporated mix in â…“ cup of chopped dried apricots.
Scoop out the dough and place on a PAM sprayed baking sheet, form into a disk and cut into 8 triangles. Sprinkle on top with a little bit of coconut sugar.
