Combine quick oats, yogurt, egg whites, chia seeds, 1 tsp of cinnamon and stevia in bowl.
Distribute batter into 8 even pancakes on a heated grill brushed with coconut oil.
Once bottom is golden brown, flip.
Topping: Saute thinly sliced apple in 1 tsp coconut oil, 1 tsp cinnamon, and 2 tbsp calorie-free syrup. (medium heat)
Serve a stack of 4 pancakes and top with half of apple mixture and more syrup.
