This one came out really yummy and really moist. I actually used AI Sports Nutrition "No Whey" Pumpkin Pie protein, but this website doesn't have that protein on their ingredients list so I just used a random whey powder to calculate the macros. You can probably use any vanilla protein, but then it will just become an Apple Protein Cake, still delicious :D
Chop up 1/4 of a peeled apple into little pieces and put it off to the side. In a mug mix together 1 scoop protein powder, 2 Tbsp. coconut flour, 2 egg whites, 1 tsp cinnamon, 1 packet of stevia, and 3 Tbsp. unsweetened almond milk. MIcrowave for about 2 minutes.
On the side mix together 1/2 Tbsp. of honey and 2 tsp. cinnamon. Dilute with a little bit of warm water to make slightly runny.
When cake is done flip upside down in a bowl and drizzle honey mixture on top. Eat while it is warm, Enjoy!
