OMG I just made these and they are so good!!!

² Ingredients

  •  1 thin slice (yield after cooking) Turkey Bacon
  •  1 medium Egg
  •  1 tablespoon Olive Oil
  •  1 small Onions
  •  1 sweetpotato, 5" long Sweet Potato
   

q Directions

First make some sweet potato hash browns (shred 3 small sweet potatoes in the food processor with a small onion) Cook in a pan with 1 tbs olive oil until done.

Cook 3 pieces of turkey bacon until crisp then crumble into the sweet potato hash.

Spray a 6 cupcake pan with nonstick spray.

Distribute the hash brown mixture between the 6 cups, forming a small "basket" in each.

Crack one egg into each hash brown basket and bake about 20-25 minutes in a 350° oven until egg is cooked. Serious egg pornography!!!
