My new favorite way to eat healthy pizza!

² Ingredients

  •  4 oz, with bone, cooked (yield after bone removed) Chicken Breast
  •  1 head, medium (5-6" dia) Cauliflower
  •  2 serving (serving = 1 oz) Trader Joe's Light Shredded Mozzarella Cheese
  •  1 serving (serving = 2 tbsp) Annie's Naturals Organic BBQ Sauce Original Recipe
  •  2 tbsp chopped Shallots
  •  0.2 cup, grated Carrots
  •  1 large Egg
  •  4 sprig Cilantro
  •  1 dash Salt
  •  1 tsp Garlic Powder
  •  1 serving (serving = 1 tsp) Spice Classics Italian Seasoning
  •  1 dash Black Pepper
  •  1 tsp Olive Oil
   

q Directions

Process raw cauliflower in food processor so it is grainy texture.
Preheat oven to 450.
Cook cauliflower in a sauté pan with olive oil and all of the seasonings listed. When cauliflower is soft, turn of heat and let cool. When cooled down, add to cheesecloth and get out as much moisture as you can squeeze. Add the egg and cheese with the cauliflower in a bowl and mix. Form two patties on a non-stick baking pan or parchment paper (sticks easily so be careful). Cook for 15 minutes, or until outside edge is slight brown. Bring oven down to 350. If you’re worried about sticking, remove the cauliflower crust from the pans, and place them on a piece of tin foil. Add toppings a little bit of BBQ sauce, cheese, shallots, shredded carrot and chicken, and place back in oven for 5-10 minutes. Sprinkle with fresh cilantro fresh out of the oven and enjoy while hot!
