³ Description

Say hello to my BLACK BEAN FALAFEL "PIE" Why make only ONE twist on a dish when you can have so much more fun with TWO? This is delicious warm when made or chilled as leftovers.

² Ingredients

  •  1.8 cup Black Beans
  •  1/2 cup, chopped Onions
  •  1/2 cup Spinach
  •  1/4 cup Parsley
  •  3 tsp Garlic
  •  0.03125 cup Lemon Juice
  •  1/3 serving (serving = 3 tbsp) All Whites 100% Liquid Egg Whites
  •  0.378 serving (serving = 1/3 cup) Bob's Red Mill Whole Grain Oat Flour
  •  1.5 tsp Cumin
  •  1/2 tsp Salt
  •  1/4 tsp Black Pepper
  •  1/2 tsp Baking Soda
  •  0.125 tsp Red or Cayenne Pepper
  •  3/4 cup Hummus
  •  1 serving (serving = 1 medium) Roma Tomatoes
  •  1/2 cucumber (8-1/4") Cucumber (with Peel)
  •  1/2 serving (serving = 2 tbsp) Dino's The Greek Place Tzatziki Sauce
   

q Directions

Preheat oven to 350F
Put all ingredients for black bean falafel into food processor and blend until smooth.
Pour mixture into greased pie dish.
Place in oven and bake for 25-30 minutes or until cooked through (not TOO soft in the center, but don’t burn the top!)
Remove pie and let cool for 20 minutes.
Top pie with hummus, sliced tomato and cucumber, and drizzle on tzatziki sauce.
Slice, serve and devour!

**Alyssia's tip: You could also just make falafel patties, but it's DEFINITELY worth it to make the pie!!**
