A tasty, grain-free appetizer! A quick and easy, healthier spin on a classic.

² Ingredients

  •  2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
  •  3 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  •  0 serving (serving = 1 serving (14 g)) Extra Virgin Olive Oil
   

q Directions

Finely chop deseeded red peppers in a food processor (save the juice and drink it! its delicious!) Pan fry sliced eggplant with a light drizzle of olive oil. In a seperate pan, quickly sautee the sweet red peppers with a drizzle of olive oil and some Italian herbs (or any other spices you wish). When both or cooked to satisfaction, spoon the peppers on top of the eggplant. Drizzle with a bit more olive oil and a sweet balsamic glaze.
