Healthy Clean Comfort Food!

² Ingredients

  •  1/2 small head (about 4-1/2" dia) Green Cabbage
  •  1/2 tsp Coriander Seed
  •  3/4 tbsp Parsley (Dried)
  •  1.5 tsp, leaves Thyme (Dried)
  •  1 cup, chopped Carrots
  •  4 clove Garlic
  •  1 medium (2-1/2" dia) Onions
  •  1/2 cup Brown Rice (Medium-Grain, Cooked)
  •  4 serving (serving = 4 oz) Trader Joe's Extra Lean Ground Beef (96/4)
  •  3 serving (serving = 1/4 cup) Eden Foods Organic Crushed Tomatoes (No Salt Added)
  •  1 cup Baby Spinach
  •  1 tsp Extra Virgin Olive Oil
   

q Directions

Cut a head of Cabbage in half.
Lightly steam one half, peeling off leaves as they soften and set aside (remove stems).

In a large pan, brown 1 lb. of Lean Ground Beef in a teaspoon of Extra Virgin Olive Oil. Season with 1 1/2 teaspoons Dried Thyme, 1/2 teaspoon Ground Coriander and a dash of Salt & Pepper.
Blend together: 1/4 Cup Crushed Tomatoes, 4 Cloves Garlic, 1 Medium Onion & 3/4 Cup Carrots

When meat is cooked through, add sauce blend and Dried Parsley (Optional: Additional 1/4 Cup Chopped Carrots) and let simmer for about 6-8 minutes.

Fold in 1/2 Cup cooked Brown Rice & 1 Cup Chopped Spinach

Lay Cabbage leaves flat (you may want to use 2 leaves for each wrap if your leaves are one the small side). Fill with Meat and fold leaves over.

Top with Tomato Sauce (I used Crushed Tomatoes seasoned with Garlic Powder & Thyme)

Bake on 425 for about 30 minutes (covered for the first 15). For a “crisp” char around the edges, end with a quick broil
