Healthy pizza for sweet potato lovers out there!
Finely chop cauliflower in food processor until you have about 2 cups of caulirice (fine rice-like texture).
Roast or microwave sweet potato, whole, until soft. Scoop out the insides and mash. Set aside.
Preheat oven to 400 degrees F.
Mix Caulirice, beaten egg and cheese until fully combined. Place on a parchment paper covered pan and spread into a relatively large circle for the crust. Bakein oven for ~20 mins.
While crust bakes, sautee veggies in olive oil (kale, onions, and zucchini) until cooked. Once the crust is done, spread the mashed sweet potato on. Sprinkle with cheese. Then top with sauteed veggies.
Place assembled pizza back in the oven for 5 mins. Slice and enjoy! Share or save it all for yourself. I won't judge ;-)
