² Ingredients

  •  1 serving (serving = 2 tbsp) Bob's Red Mill Organic High Fiber Coconut Flour
  •  1 serving (serving = 1/2 cup) Fresh & Easy Liquid Egg Whites
  •  1 tsp Baking Soda
  •  1 serving (serving = 1/4 tsp) Spice Classics Garlic Powder
  •  1/2 serving (serving = 1/4 cup) 365 Organic Tomato Sauce
  •  1/4 serving (serving = 2 tbsp) Trader Joe's Organic Tomato Paste
  •  1 serving (serving = 1 oz) Lisanatti Almond Mozzarella Style Cheese Alternative
  •  1 oz, boneless, cooked, skinless Skinless Chicken Breast
  •  1 oz Baby Spinach
  •  1 oz Mushrooms
  •  1/2 small Bell Peppers
  •  1 cherry Cherry Tomatoes
   

q Directions

Preheat oven to 410 F
1.Sift 1/8 cup coconut flour into 1/2 cup egg whites and stir to make sure there are no clumps. Add 1 tsp baking soda, 1 tsp garlic powder and 1/2 tsp black pepper. Mix thoroughly. Spray pan and cook batter on medium for a few minutes and flip (similar to cooking pancakes). Remove from pan and place on a baking pan lined with parchment paper (lightly spray oil before placing pizza crust). Spread 1/8 cup tomato sauce & 1/2 tbsp tomato paste as the base, then almond mozzarella. Add cooked chicken breast, sauteed spinach, cooked mushrooms & raw yellow pepper on top of the base. (*NOTE* Can be made vegetarian w/o chicken breast) Put in the oven for 5 minutes, and cut cherry tomatoes in half while waiting.Remove from oven, and let it cool for 3 minutes. Place cherry tomatoes on top and enjoy.
