1.Preheat oven to 350 degrees
2.In a vitamix, blend all dry ingredients and set aside.
3.In a vitamix, blend all wet ingredients.
4.Slowly add the dry ingredients to the wet ingredients in the vitamix and blend until it forms a thick batter.
5.Spray muffin tins (or a loaf pan if you're making a loaf) with coconut oil spray.
6.Scoop the batter into the tins/pan and bake for about 30 minutes, or until it is cooked through.
