I really liked it ! You could spice it up some more, but it does have a very unique flavour... and it doesn't have any meat in it.
In a 4-qt. pot add red curry paste, cumin and a bit of broth. Mash mixture until paste is no longer lumpy.
Add remaining broth, bulgur, sweet potato (peeled and diced) and green pepper (chopped). Set over high heat and bring to a boil. Cover tightly, and reduce heat to medium-low... cook for 10 minutes.
Add beans, coconut milk and tomato puree to pot and stir. Cook, uncovered for 7 minutes, until bulgur is tender and chili thickens. Top with green onions (chopped), black pepper and serve.
