³ Description

I had a weird okonomiyaki craving if you've never had one, okonomiyaki is a Japanese savory pancake with savory fillings like meat and veg and usually a japanese mayonnaise and soy related sauce. I made a clean version which is also LOW CARB to meet my diet requirements! You can put whatever fillings you want in it. I put mushroom, garlic, onion, and chicken

² Ingredients

Pancake:
2 tbsp. oat flour
2 tbsp. coconut flour
1/2 c. egg whites
Worcester sauce
Braggs soy or low sodium soy sauce

Filling:
4 oz. pre-cooked chopped chicken
1/4 c. pre-cooked spaghetti squash
1/2 c. chopped veggies (mushroom, garlic, onion, etc.)

Sauce: 1/4 c. nonfat cottage cheese
1 tbsp. peanut butter
Worcester sauce
Braggs soy or low sodium soy sauce

In a small container, mix together all ingredients for pancake batter. Add soy and Worcester sauce to taste! I added ~1 tsp of each. In another small container, mix up all the ingredients of your topping! I blended mine with an immersion blender to make it smooth, but you don't have to if you don't mind the cottage cheese lumps! In a frying pan, sauté your squash and veggies over high heat until cooked. Add chicken and cook for 1 min. Set aside. Reduce heat to medium.

Pour half the pancake batter onto the pan and spread it into your desired size. After about 30 seconds, pile your chicken and veggies onto pancake. Cook for 1 min. Pour the remaining batter over your fillings and try your best to spread it all over the top! Now the tricky part. Get yourself a big spatula, and carefully sneak it under the pancake. Ready? FLIP IT! Cook pancake until second side is set, about 1 min. If you messed it up on the flip, don't worry! Just do your best to cook the batter. It will be delicious still Plate your okonomiyaki and top it with your sauce, low sodium soy sauce, and SRIRACHA if you can take the ENJOY!
