This appetizer always is a conversation starter. It looks pretty and tastes great and it healthy.
So here we go with eggplant rolls.
Slice the eggplant pretty thinly and brush with olive oil on both sides. Bake at 425 F for 15 min on one side and 10 min on the other side. Let them cool down.
Now mix greek yogurt with pressed garlic or garlic powder and a pinch of salt. Chop some walnuts and lotsa parsley. Assemble by spreading yogurt on the slices and sprinkling nuts and parsley. Now simply roll it up and thats it!!!
