³ Description

We all know those moments, when our body craves for something sweet and tasty. You can always solve this problem with a quick cheat meal, but wouldn't it be a dream come true, to find a recipe, that's healthy, sweet and delicious at the same time? Let me introduce to you FIBOlous Muffins :) It's something I've made for a few years now, changing the recipe almost every time. It quite easy to prepare, the ingredients should be found in every kitchen.

² Ingredients

  •  100 g Plain Yogurt
  •  100 g Farmer's Cottage Cheese
  •  1 medium Egg
  •  1 medium (2-3/4" dia) (approx 3 per lb) Apples
  •  1 cup Blueberries
  •  1 medium (1-1/4" dia) Strawberries
  •  1 tsp Baking Soda
  •  100 g Oats
   

q Directions

Blend together italian cheese and greek yoghurt. Put the yolks in a mug (or anything else :D) and mix them with baking powder. In a bowl beat the egg whites until stiff. Yolk should become "puffy" thanks to the baking powder. Now mix them with your egg whites, by adding the yolks 1 tbsp at a time to the egg whites bowl. After this add also 1 spoon at a time cheese with yoghurt, oats, apple and strawberries (blended together), blueberries (whole). At this point you can a scoop of any protein powder you like (only if you want to - I didn't use any this time). Put it in the oven for 35 minutes at 340 F (170 C).
