³ Description

These are so filling and satisfying! They also taste like falafels, and taste amazing with fat free sour cream. Yum!

² Ingredients

  •  1.2 cup, cubes Eggplant
  •  1 carrot (7-1/2") Carrots
  •  1 cup Cauliflower
  •  1/4 cup Egg White
  •  1/2 serving (serving = 1 container) ShopRite Fat Free Plain Greek Yogurt
   

q Directions

1. Put the cauliflower and eggplant in a food processor until it is mashed and ricey looking. Then microwave for 3 minutes
2. Turn on the stove top so by the time you’re ready to use it, it’ll already be heated up
3. While the cauliflower and eggplant is in the microwave, shred a whole carrot
4. Mix the 3 veggies, then add a tbsp of Greek yogurt and 1/4 cup of egg whites. Mix it all together (add whichever seasonings you like)
5. Spray a large pan with cooking spray, then scoop tbsp of the mix on the pan, using a spoon to shape them into medium patties (they cook better and are “crispier” when they are thinner). You can make around 5 at a time if you use a large pan and don't make the patties too big!
6. Cook for 5 minutes then flip and cook for another 3
