What's more fun than finding fruit surprises within your pancakes? I can't think of anything! Great twist for a sweet breakfast.

q Directions

First grind your oats into a flour. Then add the protein powder (peanut butter marshmallow flavor), coconut flour, peanut flour, baking powder, stevia, egg whites, and almond extract. Blend again. Use most of the batter to form 3 pancakes in a large pan sprayed with nonstick spray but save a liiiiittle. Start to cook on a medium heat. Slice your kiwi. Gently shove a slice of kiwi into each pancake. You should have some excess kiwi to top the pancakes with. Cover the slices with the remaining batter. After 3-4 minutes of cooking, flip, and cook another 3 minutes. Enjoy!

I topped mine with the extra kiwi, baked kabocha pieces, and a healthy chocolate sauce made by mixing 1 TBSP unsweetened cocoa powder, 1.5 TBSP unsweetened almond milk, and 2 stevia packets.
