If you love mugcakes and mint chocolate chip ice cream, then you're gonna love this treat! It even has the option to be made dairy free and vegan.

² Ingredients

  •  1 tsp Vanilla Extract
  •  1 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  1 serving (serving = 1 container) So Delicious Coconut Milk Yogurt - Chocolate
  •  1/2 serving (serving = 1 scoop) Sun Warrior Raw Vegan Chocolate Protein
  •  1 serving (serving = 1/2 cup) So Delicious Coconut Milk Ice Cream - Mint Chip
  •  1/2 serving (serving = 1/3 cup) Bob's Red Mill Whole Grain Oat Flour
  •  1 serving (serving = 1/4 cup) Gold Medal Whole Wheat Flour
  •  1/2 serving (serving = 1 cup) So Delicious Coconut Milk Unsweetened
  •  1 serving (serving = 1 container) So Delicious Cultured Coconut Milk
   

q Directions

Mint chocolate chip ice cream slice by @f00dventures

- 3 tbsp whole wheat flour
- 3 tbsp oat flour
- 1/2 cup coconut milk
- 1 tsp vanilla
- 1/2 scoop chocolate protein powder of choice
- 1 tsp baking powder

Filling
- 1 container vanilla cultured almond milk yogurt
- 1 container chocolate cultured coconut milk yogurt
- 1/2 cup mint chocolate chip ice cream

Combine ingredients to make your cake. Spread batter on a large plate (at least 7x7") and microwave ~2 min. Get out a mini loaf pan and cut your cake to fit the mini loaf pan. I had enough to cut out 2 cakes. Place one in the bottom of your loaf pan. Set aside. Combine your yogurts and layer on top of your cake. Spoon your ice cream on top of this then layer your your other cake on top. Place in freezer and freeze for a few hours then enjoy!
