Such a yummy and moist cake for dessert. Orange & Almond Cake with Vanilla Frosting
Place the oranges in a saucepan and cover with cold water. Bring to the boil over medium heat. Cook for 15 minutes or until tender. Drain then return to pan and cover with cold water. Bring to the boil and cook for another 15 minutes (this will reduce the bitterness of the peel).
Drain and rinse under cold water. Coarsely chop oranges and remove any seeds then blend in a food processor until smooth. Next use an electric beater to whisk the eggs and stevia in a bowl until thick and pale. Add the orange, almond meal and baking powder and gently fold until just combined. Pour into a well greased 22cm cake pan and bake in a 180 degree oven for one hour or or until a skewer inserted into the centre comes out clean. Set aside for 15 minutes to cool.
For frosting blend cottage cheese, 1 packet of stevia and vanilla essence until smooth.
Smooth on top of cooled cake then help yourself to a guilt free generous slice!
