Happy National Hamburger Day fit-foodies! Introducing our new Fit Food Recipe: Portobello "bun" Mushroom Burger. No grains or starchy carbs in this one!

² Ingredients

  •  1/3 tablespoon Coconut Oil
  •  1 tsp Black Pepper
  •  1/4 medium (2-1/2" dia) Onions
  •  1 serving (serving = 3 oz) Earthbound Farm Organic Mixed Baby Greens Salad
  •  1 serving (serving = 4 oz) Wal-Mart Extra Lean Ground Beef 96/4
  •  1 serving (serving = 1 cap) Dole Portobello Mushroom Caps

Note: Walmart ground beef used in nutritional information, but recipe calls for 96% Extra Lean Organic Grass Fed Ground Beef

Weigh 6 oz of ground beef on a food scale and roll into a burger patty. Lightly season with desired seasonings. In a small pan, add coconut oil and let melt over medium heat. Add cut onions and let cook until golden brown. Be sure to shake pan and move around ever so often. On a grill pan or on a BBQ grill patties to desired prepared temperature (medium rare, medium etc). Remove stalks from portobello mushrooms and spray top and bottom with coconut oil spray or lightly brush with olive oil. Place mushrooms on grill or in a pan for 3 minutes each side then flip. Add greens mixture to onions and cook briefly in oil mixture. Remove mushroom "buns" and add burger, and sautéed' onion/greens and whatever other desired condiments or toppings you desire. Enjoy

NOTES:
Avocado and low fat Cheese taste great on this burger too!
