High Protein,Moderate Carb, delicious blueberry coconut pancake!
1/2 cup gluten-free old fashioned rolled oats
1/4 cup organic frozen blueberries
1/2 cup egg whites
1 tbsp coconut oil
1 tsp vanilla extract
cinnamon, stevia to taste
Preheat skillet or griddle to medium heat.
1. Mix together egg whites, oats, vanilla, cinnamon, and stevia .
2. When water dances off the pan, pour mix onto skillet. Wait 2 minutes or until brown around the edges.
3. Flip pancake over and let it cook for 2 more minutes or until it's brown.
Spread coconut oil over hot pancake, and add berries.
You can add sugar-free syrup if you'd like, or coconut agave.
