Quick & easy! Food to fuel my body before taking my son to the dentist

² Ingredients

  •  1 serving (serving = 1 tbsp) Colavita Rachael Ray EVOO Extra Virgin Olive Oil
  •  1/4 serving (serving = 1 medium onion) Tanimura & Antle Sweet Yellow Onion
  •  1/2 cup Spinach
  •  1/4 cup, chopped Zucchini
  •  1/4 cup, chopped Bell Peppers
  •  1 serving (serving = 3 oz) Giorgio Baby Bella Mushrooms
  •  1/3 cup, cubes Sweet Potato
  •  1 tsp Black Pepper
  •  1 tsp Paprika
  •  1 oz Sardines with Tomato-Based Sauce (Mixture)
  •  1 medium whole (2-3/5" dia) Tomatoes
  •  1/4 cup sprigs Dill
  •  1 tbsp chopped Chives
  •  1 medium Egg
   

q Directions

Sauté 1 tbsp EVOO 1/4 cup yellow onions diced 1/2 cup spinach 1/4 cup zucchini diced 1/4 cup orange bell peppers 1/4 cup baby Bella mushrooms 1/3 cup sweet potato diced 1 tsp black pepper 1 tsp paprika Baked 6 oz Sardines at 350 until cooked/tender Add 3 very ripe tomatoes (diced) 1/4 cup chopped dill 1/4 cup chives Ta-Da & Enjoy Serves 2 (added a sunny side up egg to each plate, love the yolk w/ the tomato sauce from the sardines)
