³ Description

Spicy-Avo-Tuna Melt with onions on Pump/Rye bread over a bed of fresh spinach.

² Ingredients

  •  0.2 avocado, NS as to Florida or California Avocados
  •  1 serving (serving = 1 slice) Pepperidge Farm Dark Pump Pumpernickel Bread
  •  1 serving (serving = 1 can) StarKist Foods Solid White Albacore Tuna
  •  1/2 tsp Chili Powder
  •  1/2 tsp Black Pepper
  •  1/2 tsp Garlic Powder
  •  1 serving (serving = 1 tsp) The Silver Palate Wasabi Mustard
  •  0.1 serving (serving = 1 cup) Fage Total 0% Greek Yogurt
  •  1/2 oz Jalapeno Peppers
  •  1/4 cup, chopped Onions
  •  1 serving (serving = 1 oz) Great Lakes Cheese Sharp Cheddar Cheese
  •  1/2 cup Spinach
   

q Directions

Mash and spread 1/5 of an avocado on a slice of
Pepperidge Farms rye/pumpernickel bread.

Then in a bowl combine the following:
1 can solid albacore tuna in water (drained),
1/2 tsp chili powder,
1/2 tsp pepper,
1/2 tsp garlic powder,
1-2tbsps wasabi mustard (can substitute with hot sauce or Siracha),
1tbsp nonfat plain greek yogurt,
1tbsp diced jalepenos.

Mix thoroughly. Add more Wasabi Mustard or yogurt if needed for consistency. Spread evenly on top of Avocado. Dice white onion and spread generously over tuna followed by a coating of about 3 tbsps of finely grated extra sharp cheddar cheese. Toast in toaster oven until bread is slightly crispy and cheese is thoroughly melted. Lay on top of a bed of fresh spinach. Enjoy!! Oh and the pickle is zesty garlic
